On a recent visit, we had the pleasure of sampling dishes that showcased both technical finesse and international creativity, all thanks to the skills of Executive Chef Abdelhameed Al-Mahsiri. With his warm personality and deep knowledge of global cuisines, Chef Abdelhameed leads a team that delivers not just great food, but a genuinely memorable experience.

Classics with a Twist
The feast began with a classic Rigatoni Carbonara – a dish that managed to strike a perfect balance between indulgence and refinement. Smoked turkey ham brought a subtle depth to the creamy carbonara sauce, while the duo of pecorino and Parmesan added a satisfying sharpness. It was hearty, familiar and elegantly executed.

Fresh Flavours from the Mediterranean
Next came the Mediterranean salmon, served on a bed of pesto fregola. The fish was cooked with precision, its crisped skin giving way to perfectly moist flesh.

The fregola – a Sardinian pasta resembling large couscous – absorbed the herby pesto beautifully, making each bite burst with freshness and layered texture.

A Bold Fusion
Perhaps the most intriguing dish of the day was the sushi rice risotto with Mexican-style flame-grilled chicken – a bold culinary fusion that truly impressed. This unique creation brought together elements from Japan, Mexico and Italy in one cohesive plate. The sushi rice provided a soft, slightly sticky base, complemented by chicken marinated with three types of Mexican chilli, offering a smoky heat without overpowering the dish. The finish of Italian cheeses tied everything together in an unexpected harmony. It was executed to perfection and the team is already excited to come back for more.

Throughout the meal, the attentive service and warm hospitality from the Charthouse team reinforced the sense that this is a place with heart. Under Chef Abdelhameed’s leadership, the kitchen isn’t afraid to innovate, but it never strays too far from what makes food enjoyable – comfort, balance and most of all, great taste.
