Flavours in Harmony

Fusions at The Gulf Hotel Bahrain has launched an exciting new menu, blending creativity, culture and bold flavours for an unforgettable dining experience that left Kristian Harrison truly impressed.
There are some dining experiences that linger with you long after the evening ends, and my recent visit to Fusions was one of them. From the moment I walked in, the setting felt effortlessly stylish yet warm, perfectly balancing contemporary design with subtle Bahraini influences. The amazing panoramic city views certainly helped, too!
We began with a warm, freshly-baked bread basket and Fusions’ signature crackers, followed by elegant pre-starter bites. The Foie Gras on toasted brioche, finished with a delicate pinot noir glaze and red currant compote, was rich yet balanced, while the tremella nest added an unexpected texture that worked beautifully.

The starters to share a delight. The Khaleeji Croquettes, crisp on the outside and tender within, carried just the right amount of spice, brightened further by a punchy Bahraini lime gel. The Middle Eastern Melody offered a refreshing contrast, with bib lettuce, avocado, pomegranate, cherry tomatoes and pickled beetroot tossed in a light honey-mustard dressing. But it was the Heritage Ceviche that truly stood out. Prepared with Bahraini white fish, tiger milk and smooth sweet potato purée, it delivered vibrant, clean flavours with just the right amount of zing.
For my main, I chose the Criollo Charcoal Fire Steak, cooked perfectly medium rare. Juicy, tender and full of flavour, it came with creamy parmesan potatoes, vibrant purple cauliflower and a glossy soya-mustard jus that tied the dish together beautifully. Across the table, the Local Fish Provençal bil Baharat looked just as enticing, served with tomato salsa, pickled olive rice and broccolini, while the Tomato Ravioli with parmigiano espuma promised pure comfort for pasta lovers and vegetarians.
To finish, the Fleur de Rose dessert was an absolute masterpiece. 
The rose-infused cream delight, with its delicate semolina crumble, saffron triny and gold leaf, was as stunning to look at as it was to eat. Floral, silky and indulgent, it was the perfect finale.
What impressed me most was how thoughtfully the menu has been curated. Every dish felt creative yet familiar, with flavours that complemented one another beautifully. It’s a menu that does explore the world’s cuisines whilst managing to stay true to its Bahraini roots.
Fusions, indeed!
