Primavera, also known as the ‘Trattoria Moderna’, offers exciting and traditional dishes reflecting authentic Italian cuisine as characterised by two-Michelin-starred chef, Oliver Glowig. With a focus on local and seasonal ingredients throughout the menu, the restaurant has unveiled a refreshing gastronomic line-up that includes staples such as homemade pasta as well as speciality dishes that spotlight an innovative fusion of Italian and local flavours.

Chef Oliver Glowig’s creative menu for Primavera is based on a reinterpretation of the Italian traditions. Concentrating on the high quality of the ingredients, his renowned cuisine derives from the pleasure of melting together and experimenting with exceptional tastes. Do not miss: Vitello Tonnato (veal Piedmontstyle with tuna mayonnaise and caper), Ravioli Capresi Ripieni di Ricotta e Salsa di Pomodoro (homemade ravioli stuffed with ricotta cheese and tomato sauce) and Filetto di Branzino in Crosta di Olive con Caponata di Verdure e Olio al Basilico (olive crusted local seabass with vegetable caponata and basil oil).

Third Stop: The Ritz Gourmet Lounge – France

Inspired by the golden age of Cesar Ritz and Auguste Escoffier, who came to fame in the late 19th century, The Ritz Gourmet Lounge embraces the heritage of these two pioneers in international hospitality with a dedicated menu influenced by some of Escoffier’s world classics served in a splendid royal ambience.

The authentic French interior design has been created in reminiscence of the Belle Epoque, the ‘Beautiful Era’, a period in French history which started around 1890 and ended in 1914. Rich velvet upholstered Napoleon chairs and sofas invite you to enjoy a chic ambience as in a Parisian salon de thé (tea house). Guests can sample Escoffier’s signature dishes such as Peach Melba, named after the Australian opera singer Nellie Melba, Belle Helene and Strawberries Romanoff.

Fourth Stop: Nirvana – India

The very name conjures up images of maharajas who knew the secrets of spectacular dining. Nirvana brings royal flavours to The Ritz-Carlton for a dining adventure rarely enjoyed outside India. Executive Indian chef Mahipal Singh creates an exquisite selection of Indian recipes, a virtual firework display for the palate and an authentic passage to India. The culinary experience is complemented by live music of the santoor (Indo-Persian stringed musical instrument) and décor that is unsurpassed on the island.

Thai provides light food snacks with a Pan- Asian and Thai influence as well as a large selection of mixed beverages. These are made mainly from typical Thai fruits combined with herbal and spice infusions, designed and crafted by the lounge’s liquid chefs.
