A Symphony of Spices

As one of the top dining destinations in Saar, The Great Kabab Factory beckons food enthusiasts to embark on a delightful exploration of vibrant and diverse Indian cuisine, writes Shruti Ramesh.

This exquisite restaurant offers a refined experience that artfully marries tradition with contemporary elegance. Soft, intimate lighting, traditional brass cutlery and the gentle strains of cultural music harmonise to create an atmosphere that is both sophisticated and comforting; the ideal setting for a culinary adventure that lingers long after the last bite.

Our dining experience began with a pre-appetiser course. First up was a delightfully sweet mango dip, served alongside a seasonal platter of colourful fruits and vegetables. Next, the Kafir Lime Dal Shorba – a warm lentil soup – was elegantly poured from a traditional brass kettle into shot glasses, creating an intriguing presentation that perfectly embodied the restaurant’s blend of classic flavours and modern flair.

The Lucknowi Dal Vada Chaat, infused with vibrant South Indian flavours, was a delightful introduction that struck the perfect balance of richness, priming our palates for the courses to come.

As the appetisers unfolded, the kababs arrived one by one in a procession of decadence. The Galouti Kabab, the restaurant’s signature dish, featured over 100 spices. Exceptionally soft, moist and bursting with flavour, it was undoubtedly the highlight of this course, an absolute must-try! The Jalandhari Tandoori Raan E Murg, tender chicken marinated in yoghurt and exotic Punjabi spices, was generously seasoned and immensely satisfying.


Another standout was the Amla Aur Peel Mirch Ra Jhinga, where succulent prawns marinated in Indian gooseberry and yellow chilli created a stunning dish that quickly became one of my personal favourites. The Delhi Wali Tawa Macchi, filleted fish marinated in a refreshing mint and coriander blend, paired exquisitely with tamarind sauce, making it a delight for seafood lovers.

Next, we savoured the Ramchi Highway Murg Tikka, juicy boneless chicken infused with the vibrant street flavours of Mumbai. Following that, the Mewari Mutton Pasliyaan, traditional lamb chops enriched with Rajasthani spices, were tender and juicy, practically falling off the bone. The Dhungar Malai Soja Boti, a creamy and smoky spiced soya chop, was soft and savoury, making it an excellent option for vegan patrons.


Then, various main courses in intricately carved brass pots were laid out on the table. The 1998 Dal Factory – a creative twist on dal makhani – was so buttery and flavourful that even a self-proclaimed ‘dal-hater’ like myself returned for seconds. The Malwani Chicken Curry was moist, expertly marinated and featured a savoury gravy with a satisfying spicy kick. However, the crowning glory was the Kolkata Chicken Biryani, served with boorani raita – juicy chicken pieces nestled in aromatic, spice-packed rice that left us yearning for more.

To conclude our meal, we indulged in dessert. The Jaggery, Peanut and Sago Payasam was sweet, creamy and comforting, while the Mirch Aur Badam Ka Halwa presented a unique twist, with green chilli adding a fiery kick that beautifully balanced the sweetness.

In summary, The Great Kabab Factory offers ultra-attentive service on top of a myriad complex flavours that successfully pay tribute to the vastness of Indian heritage.
