Coming Full Circle

Mr. Lee describes his return as a move that feels “both professional and personal, a full-circle moment in my journey.”
Born and raised in South Korea, Mr. Lee’s earliest memories of hospitality were formed within his family’s small restaurant. “Hospitality has always been part of my life. I spent time helping my family with their small restaurant business in Korea, which first sparked my passion for food and service,” he explains. In his early twenties, he moved to New Zealand, where his professional journey began and he trained and worked as a chef.
Over the next 18 years, Mr. Lee built a career across luxury hotels in New Zealand, Bahrain, the UAE, Qatar and Lebanon, and completed training in a Michelin-starred restaurant in France. After the pre-opening of a luxury resort as Executive Chef, he made what he calls “a pivotal move,” transitioning into a Director of Food & Beverage role. “Bahrain holds special meaning for me, as it was the country where I first stepped into a Director of F&B role,” he reflects. Returning to The Ritz-Carlton, Bahrain now “feels deeply personal.”
Across different markets and concepts, Mr. Lee is clear about the standards he refuses to compromise. “There are three standards I never compromise on: luxury, consistency and people,” he states. For him, “luxury is not defined by price or concept. It is about precision and attention to detail.” Regardless of the cuisine or setting, he maintains that “the guest experience must feel thoughtful and memorable.”
Consistency, he stresses, remains critical. “Guests may forgive a single mistake, but they will never forget inconsistency.” He also places strong emphasis on team culture. “Exceptional guest experiences are delivered by our Ladies and Gentlemen,” he says, using the brand’s term for its team members. “Investing in people and in their growth is fundamental to long-term success.”
Having worked across several regions, Mr. Lee views Bahrain’s dining culture with respect. “Bahrain is a true cultural melting pot, with a remarkable blend of communities who proudly call it home,” he observes. “This diversity is reflected beautifully in its dining scene.” What impresses him most, however, is “the authenticity and pride within Bahraini cuisine itself.” He notes that “Bahrain has maintained its own distinct culinary heritage, celebrated and preserved by its people.” Combined with the warmth of local hospitality, he believes this creates “a dining culture that feels sophisticated and heartfelt.”
Leading Food & Beverage at an established property such as The Ritz-Carlton, Bahrain requires careful balance. “The Ritz-Carlton, Bahrain has a powerful legacy built over decades,” he acknowledges. His approach remains measured. “My approach is to evolve what works thoughtfully.”
Listening forms the foundation of that process. “The key is listening to our loyal guests and to our Ladies and Gentlemen,” he explains. “Understanding what guests already love allows us to enhance those emotional touchpoints.” At the same time, he recognises that “identifying emerging preferences creates opportunities to introduce new concepts and experiences.” Innovation, he adds, must be handled with care. “Innovation must feel natural, not disruptive.”
Stepping into a role of this scale requires structure. “The first few months are about listening and aligning,” Mr. Lee notes. He prioritises meeting both guests and team members, recognising that “they are the most valuable source of insight.”
In practical terms, this includes reviewing performance and assessing outlet positioning, alongside evaluating guest feedback. Supplier relationships are strengthened and service flow examined where necessary. However, clarity remains essential. “Strategy only becomes meaningful when translated into an achievable action plan,” he explains. “My role is to connect vision with structure, aligning commercial objectives with team capability.”
With a calendar filled with business engagements, leisure stays and major events, maintaining standards during peak periods presents one of the greatest operational challenges. “Consistency during high-demand periods is one of the greatest tests of a luxury operation,” he remarks. Protecting that consistency, he adds, “requires strong systems and disciplined planning.”
Creativity, however, is not sidelined. “During peak periods, we focus on preparation and alignment,” he says. When teams feel supported, “they perform confidently, even under pressure.”
Ultimately, he returns to the same principle. “Our greatest strength lies in our Ladies and Gentlemen. Their commitment to excellence is what allows us to maintain uncompromising standards while continuing to evolve.”
For Mr. Lee, rejoining The Ritz-Carlton, Bahrain carries both honour and responsibility. “With its strong legacy and established F&B portfolio, there is a powerful foundation to build upon,” he notes. Looking ahead, he adds, “I look forward to collaborating with our Ladies and Gentlemen to continue delivering genuine care and elevate our guest experiences.”
